Yellow Pea Soup
Ingredients
350 g (10 oz., 4 dl, 1 2/3 cups) dried yellow peas
2 liters (quarts) water
1 onion, chopped
500 g (1 pound) lightly salted pork shoulder or belly, in 1 piece
bacon rind
2 tsp. thyme
1 carrot, diced
1/5 leek, diced
salt
freshly ground white pepper
Instructions
1)
Soak the peas in cold water overnight.
2)
Rinse & drain the peas.
3)
Combine with the water, onion, pork, bacon rind & thyme.
4)
Bring to a boil & skim well.
5)
Simmer until peas and pork are done, about 1 hour.
6)
Remove the pea hulls with a whisk or slotted spoon.
7)
Cook the carrot and leek in the soup 2-3 min., then add the meat. Season with salt & pepper.
8)
Serve hot. Enjoy!
