Walnut Bread
Ingredients
100 g (3 1/2 oz., 2 1/2 dl, 1 cup) chopped walnuts
100 g (3 1/2 oz., 1 1/2 dl, 2/3 cup) cracked wheat
100 g (3 1/2 oz., 2 dl, 3/4 cup) coarse whole rye flour
100 g (3 1/2 oz., 2 dl, 1 cup) fine whole rye flour
2 dl (scant 1 cup) creme fraiche or whipping cream
5 dl (2 cups) water
Instructions

Combine all the ingredients and refrigerate overnight.

Heat the dough to about 30 C (86 F) and add:

50 g (1 3/4 oz.) fresh yeast

1 tsp. salt

2 Tbs. walnut oil

800 g ( 1 3/4 pounds, about 13 1/4 dl, 5 1/2 cups) flour

Knead the dough. Form into 2 loaves. Let rise.

Preheat the oven to 200 C (400 F),

Brush the loaves with: beaten egg white milk
10)
Bake 1 hour.
