Vikna Lefse

Ingredients

125 g (4 oz., 1/2 cup) margarine
2 Tbs. light corn or sugar syrup
1 1/2 liters (quarts) buttermilk
4 Tbs. (1/4 cup) hornsalt (or 3/4 cup baking powder)
2 kg (33 dl, 14 cups) flour
100 g (3 1/2 oz., 2 dl, 3/4 cup) fine whole rye flour

Instructions

1) Melt margarine, add syrup and heat almost to a boil.

2) Add 5 dl (2 cups) buttermilk. Stir in hornsalt and remaining milk.

3) Combine the two flours. Stir into the milk mixture. Work the dough as little as possible.

4) Divide the dough into 40 pieces of equal size. Roll out and cook on a griddle on both sides, as described in previous recipes.
