Vesteralen Fish
Ingredients
1 1/2 Tbs. butter
2 1/2 Tbs. minced onion
120 g (4 oz.) skinless and boneless ocean catfish fillet
120 g (4 oz.) skinless and boneless salmon fillet
2 spears broccoli
1 dl (1/3 cup) white wine
salt
pepper
1 egg yolk
2 dl (3/4 cup) whipping cream
4 peeled cooked shrimp
4 peeled cooked mussels
2 mushrooms, sliced
lemon juice
chopped parsley
Instructions
1)
Grease a frying pan with the butter and add the onion.
2)
Roll up the fish fillets and place in the center of the pan.
3)
Place broccoli alongside the fish.
4)
Add wine, salt and pepper.
5)
Cover with aluminum foil. Place over medium heat and steam 5 min.
6)
Fold back the foil and pour off some of the poaching liquid.
7)
Beat the egg yolk into the cream and add to the poaching liquid.
8)
Add shrimp, mussels and mushrooms to the pan and cook about 30 seconds.
9)
Pour the sauce back into the pan and reheat. Do not allow to boil.
10)
Season with lemon juice and garnish with chopped parsley.
11)
Serve with boiled potatoes. Enjoy!
