Tapioca Pudding

Ingredients

1 1/4 liters (5 cups) water
1 3/4 dl (3/4 cups) tapioca (not quick cooking)
1/2 dl ( 3 1/2 Tbs) sugar
2 1/2 dl (1 cup) ready to drink berry juice
sugar

Instructions

1) Bring the water to a boil. Add tapioca, sugar and juice. Simmer about 20 minutes.

2) Pour into a rinsed 1 1/2 liter (6 cup) mold. Sprinkle with sugar to keep a skin from forming. Refrigerate.

3) Serve with light cream and sugar.
