Tapenade

Ingredients

8oz/225g pitted black olives
1 clove garlic, peeled and crushed
8 anchovy fillets
1 Tbs. capers
1/4pt/150ml olive oil
salt and freshly ground black pepper
juice of 1/2 lemon

Instructions

1) Place olives, garlic anchovies and capers in a food processor and chop quite finely. Add the olive oil drip by drip, with the motor running slowly until the mixture forms a fairly thick paste and all the oil is used up.

2) Season the paste with salt and plenty of freshly ground balck pepper. Be careful with the salt-the olives and anchovies are salt. Add lemon juice and stir to mix well

3) Place into a pot. Serve with crusty bread.
