Stuffed Lobster

Ingredients

300 g (10 oz) fish forcemeat
6 dl (2 1/2 cups) whipping cream
6-7 dl (3-3 1/2 cups) lobster meat, sliced
1 1/2 Tbs. melted butter
1 1/4 dl (1/2 cup) breadcrumbs

Instructions

1) Preheat the oven to 160 C (325 F)

2) Grease a 2 liter (quart) terrine. Cover the bottom w/ half the fish forcemeat.

3) Reduce the whipping cream over moderate heat (it burns easily) until 2 dl (3/4 cup) remains.

4) Stir in the lobster meat & spoon over the fish forcemeat.

5) Top with remaining forcemeat.

6) Even the top w/ rubber spatula, brush w/ melted butter & sprinkle w/crumbs.

7) Place the terrine on a towel (to keep it from moving) in an oven pan.

8) Add hot water to reach halfway up the sides of the terrine.

9) Cook i the oven 30-45 min.

10) Slice & serve, allowing 1 slice per serving. Enjoy!
