7 dl (3 cups) full fat milk 100 g (3 1/2 oz., scant 1/2 cup) margarine 1 tsp. salt 1 Tbs. sugar 1 kg (16 3/4 dl, 7 cups) flour 1 Tbs. ground anise
Instructions
1) Bring the milk to a boil and add margarine, salt and sugar.
2) Combine flour and anise. Pour over the boiling milk mixture. Mix well. Cool about 1 hour. The dough should be stiff.
3) Divide the dough into pieces of equal size and roll out into thin sheets.
4) Place 1 sheet on the griddle. When it begins to steam, place another sheet on top. Turn and remove the first sheet. Pack the cooked lefse in a cloth.
5) To serve, spread with butter and sprinkle with sugar or top with cheese.
6) Note: These used to be served with poached fish, but today, they are served with coffee.
