Spiked Berry Ice Cream

Ingredients

1 dl (1/2 cup) your choice of berries
2 Tbs. gin
3 dl (1 1/4 cups) whipping cream
2 eggs
1/2 dl (3 1/2 Tbs.) confectioner's sugar
3 1/2 dl (1 1/2 cups) berry jam

Instructions

1) Soak the berries in gin.

2) Whip the cream.

3) Beat the eggs with the sugar until light and lemon colored. Combine egg yolk mixture with the jam. Carefully fold in the cream and 3/4 of the berries.

4) Sprinkle the remaining berries in the bottom of a 1 liter (quart) ice cream mold. Pour over the cream mixture. Freeze.

5) Serve with whipped cream and fresh berries.
