Spicy Citrus Chicken

Ingredients

3 Tbs. oil
1 onion, peeled and finely chopped
2 large cloves garlic, crushed
1 tsp. finely chopped root ginger
4 chicken supremes, cut into chunks
1/2 tsp. chili powder
1 tsp. ground cumin
1 tsp. ground coriander
1/2pt/150ml chicken stock
1 small avocado, peeled and stoned
lemon juice
juice of 1 grapefruit
salt and ground black pepper
1/2 avocado, sprinkled with lemon juice
segments of 1 grapefruit
chopped coriander for decoration

Instructions

1) Heat oil in pan and fry onion, garlic and ginger until softened. Remove with a slotted spoon and reserve. Add chicken to pan and seal. Return onion mix and stir in spices. Cook for 1 minute.

2) Pour over stock. Mash whole avocado and sprinkle with lemon juice. Stir into chicken mix with grapefruit juice. Bring to the boil and cover. Simmer gently for 15 minutes or until chicken is cooked through. Season. At the end of cooking time, peel and slice remaining half avocado, then stir in with grapefruit segments. Heat through. Decorate with chopped coriander.
