Smoked Tail Ends

Ingredients

1 1/2 kg (3 pounds) tail ends of cod
salt
butter
1 dl (1/2 cup) 35%fat sour cream
1 dl (1/2 cup) buttermilk or yogurt

Instructions

1) Clean, fillet and wash the fish.

2) Sprinkle generously with salt on both sides and marinate in the refrigerator 2-3 hours.

3) Rinse the salt off the fish and hang to dry in an airy place overnight.

4) Lightly smoke the fish 2-4 hours.

5) Remove the skin, but leave the fillets whole.

6) Brown the fish in butter on both sides.

7) Lower the heat and add the sour cream and buttermilk. Braise over low heat 2-3 minutes.

8) Serve with the sauce, boiled carrots and boiled potatoes. Enjoy!
