Singapore Noodles

Ingredients

4 Tbs. oil
4 spring onions, trimmed and chopped
4oz/100g pork fillet
1 red and 1 green pepper, deseeded and sliced into matchsticks
2 cloves garlic, peeled and crushed
1/2in/1cm root ginger, finely chopped
1 red chilli, deseeded and in rings
12oz/350g cooked egg noodles
salt and freshly ground black pepper
4oz/100g peeled prawns
2 eggs

Instructions

1) First cook the pork fillet. Heat 1 Tbs. oil over high heat, then brown fillet all over and season. Turn down heat and continue cooking over medium heat until cooked through.

2) Heat remaining oil in a pan and fry spring onions, peppers, garlic, ginger and chilli. Add cooked noodles to pan and turn over to coat in the flavorsome mix. Season with salt and freshly ground black pepper.

3) Cut the pork into thin shreds and toss through mix with prawns then heat through. Meanwhile beat eggs with seasoning and make a small thin omelette. Remove from the pan and cut into strips. Strew these over the top of the noodles just before serving.
