Sherry Pudding

Ingredients

9 sheets (3 Tbs. powdered) gelatin
7 1/2 dl (3 cups) whipping cream
1 3/4 dl (3/4 cup) sugar
1 3/4 dl (3/4 cup) sweet sherry

Instructions

1) Soak the gelatin sheets in cold water )or sprinkle the powdered gelatin over 3 Tbs. of the cream) 5 minutes to soften.

2) Bring cream and sugar to a boil.

3) Squeeze excess water from the gelatin sheets (disregard for powdered gelatin).

4) Melt the gelatin in the hot cream. Cool slightly, then stir in the sherry. Chill until syrupy.

5) Pour the partly-stiffened mixture into a rinsed 1 liter mold. Chill at least 3 hours.

6) Unmold and serve with sauce made from berry juice concentrate.
