480 g (1 pound) shark fillet 8 large slices boiled ham 8 thick slices Jarisberg cheese flour seasoned with salt and pepper lightly-beaten egg white breadcrumbs butter
Instructions
1) Cut the fillet into 8 thin pieces. Pound lightly.
2) Cover almost half of each piece of fish with a slice of ham wrapped around a slice of cheese. Fold over the other half of the fish. Press the edges together.
3) Dip in seasoned flour, then in beaten egg white and finally in crumbs.
4) Brown 2-3 minutes per side in butter, until the fish is cooked and the cheese begins to melt.
5) Serve with browned butter, boiled potatoes and vegetables.
