Serina Cakes

Ingredients

150 g (5 oz., scant 2/3 cup) margarine
1 1/2 dl (2/3 cup) sugar
1 egg
1 tsp. vanilla sugar (1/2 tsp. extract)
1/4 tsp. hornsalt (or 3/4 tsp. baking powder)
3 1/4 dl (1 1/2 cups) flour
1 egg or egg white, lightly beaten
chopped blanched almonds

Instructions

1) Beat the margarine with the sugar until light and fluffy. Beat in the egg.

2) Sift over the dry ingredients and mix well. Cover and refrigerate the dough overnight.

3) Preheat the oven to 190 C (375 F).

4) Form the dough into a sausage. Cut into equal parts. Form each into 3 cm (1 1/4") balls and place on a greased baking sheet.

5) Press down with a fork. Brush with beaten egg or egg white and sprinkle with almonds.

6) Bake until golden, about 10 minutes.
