Semolina Pudding
Ingredients
3 dl (1 1/4 cups) semolina (cream of wheat)
1 liter (quart) full fat milk
75 g ( 2 2/3 oz., 1/3 cup) butter
a few grains of salt
2 1/2 dl (1 cup) confectioner's sugar
3 Tbs. butter
8 eggs, separated
Instructions
1)
Bring milk, 75 g (1/3 cup) butter, salt and sugar to a boil.
2)
Add the semolina and simmer 15 minutes.

Preheat the oven to 160 C (325 F).
4)
Remove from the heat and add the remaining butter.
5)
Beat in the egg yolks, one at a time.
6)
Beat the egg whites until stiff but not dry and fold in.
7)
Pour into a greased 2 liter mold.
8)
Place a towel in the bottom of an oven. Place the mold on the towel and fill with hot water halfway up the sides of the mold.
9)
Bake 1 hour. Chill.
10)
Unmold and serve with sauce made from berry juice concentrate.
