Sausage And Apple Jam

Ingredients

2 Tbs. oil
1 onion, peeled and finely chopped
2 cloves garlic, crushed
1 green pepper, de-seeded and finely chopped
2 apples, peeled, cored and finely chopped
1 Tbs. sun-dried tomatoes in oil, drained and finely chopped
3 Tbs. water
1 Tbs. sugar
2 Tbs. vinegar
1 Tbs. dry sherry
Freshly ground black pepper

Instructions

1) Heat oil in a pan and fry onion and garlic gently to soften.

2) Add green pepper and apple and cook for a further minute.

3) Stir in the tomatoes and remaining ingredients. Bring to the boil and cook slowly until the liquid disappears. Cool and chill.

4) Serve with grilled Toulouse sausages.

5) Keep covered in the fridge and use within 3 days.
