Sand Cakes
Ingredients
125 g (4 1/2 oz., 1/2 cup) margarine
125 g (4 1/2 oz., 1/2 cup) butter
125 g (1 1/2 dl, 2/3 cup) sugar
1 egg
400 g (about 6 3/4 dl, 2 3/4 cups) flour
50 g (1 1/4 dl, 1/2 cup) ground almonds
Instructions
1)
Beat margarine, butter and sugar until light and fluffy. Add egg, mixing well.

Stir in flour and almonds. Cover and refrigerate 1 hour.
3)
Preheat the oven to 190 C ( 375 F).
4)
Grease "sandkake" (small fluted pie) tins.
5)
Divide the dough into pieces and press into the greased tins. Make as thin as possible.
6)
Bake on a baking sheet until golden, 10-12 minutes. Cool slightly, then remove from the tins. Cool on a rack.
