Salt Meat Hash

Ingredients

450 g (1 pound) salt mutton
150 g (5 oz.) bacon, in one piece
300 g (10 oz.) fresh mutton
1 1/2 kg (3 pounds) potatoes
750 g ( 1 2/3 pounds) carrots
1/2 medium celeriac
1/2 large rutabaga
1 leek
8 dl (3 1/3 cups) salt meat stock
salt
freshly ground white pepper

Instructions

1) Soak the salt mutton in cold water overnight.

2) Simmer all the meat in water until almost tender, about 1 hour.

3) Remove from the stock and let cool.

4) Cut the potatoes and vegetables into 8 mm (1/2") cubes and cook in the salt meat stock until tender, about 10 minutes.

5) Cut the meat into 8 mm (1/2") cubes and add.

6) Season with salt and pepper and serve with flatbread. Enjoy!
