Salt Fish Dumplings
Ingredients
1kg (2 1/4 pounds) pre-soaked boneless and skinless salted pollack or cod fillets
750 g (1 2/3 pounds, 4 large) peeled potatoes
2 cold boiled potatoes
1 small onion
4 Tbs. (1/4 cup) barley flour
1 Tbs. light corn syrup
about 1 dl (1/3 cup) full fat milk
150 g (5 oz.) fresh pork fat, cubed
Instructions
1)
Grind fish, potatoes and onion once.
2)
Work in the flour, syrup and milk. The forcemeat should be quite loose.
3)
Make a small sample ball to check for seasoning.
4)
Make 14-16 dumplings with wet hand. Place a cube of fat in the center of each.
5)
Place in boiling water and simmer about 45 minutes.
6)
Serve with fried pork, boiled rutabagas, potatoes. Enjoy!
