Rice Cream

Ingredients

Rice porridge:
4 dl ( 1 2/3 cups) water
1 3/4 dl (3/4 cup) round grain rice
1 liter (quart) full fat milk
1 tsp. salt
sugar
2 1/2 dl (1 cup) whipping cream
1 tsp. vanilla sugar (1/2 tsp. extract)

Instructions

1) Bring the water to a boil and add the rice. Return to a boil and simmer until all water is absorbed, 10-15 minutes.

2) Add the milk and bring to a boil. Lower the heat, cover and simmer until the rice is tender, about 30-40 minutes. Season with salt. Transfer the porridge to a dish and sprinkle with sugar. Cool.

3) Lightly whip the cream.

4) Fold the porridge into the cream. Sweeten with sugar and vanilla sugar.

5) Serve with sauce made from berry juice concentrate.
