Rhubarb Cake
Ingredients
150 g (5 oz., scant 2/3 cup) unsalted butter
2 dl (3/4 cup) sugar
3 eggs
4 dl (1 2/3 cups) flour
2 tsp. baking powder
3/4 dl (1/3 cup) full fat milk
300 g (10 oz., about 3 stalks) rhubarb
sugar
Instructions
1)
Preheat the oven to 200 C (400 F).

Beat butter and sugar until light and fluffy.
3)
Beat in the eggs, one at a time.
4)
Combine flour and baking powder and add alternately with milk.
5)
Chop the rhubarb.
6)
Pour the batter into a greased 20x30 cm (8x12") pan.
7)
Top with rhubarb and sprinkle with sugar.
8)
Bake on the lowest oven shelf 40 minutes. Cool.
9)
Serve with a thick vanilla cream. Enjoy!
