2 Tbs. oil 1 onion, peeled and finely sliced 1/2 red cabbage, cored and finely shredded 1 Tbs. brown sugar juice and zest of half a lemon 1 Tbs. sherry vinegar 6oz/175g cooked shelled chestnuts salt and ground black pepper
Instructions
1) Heat oil in a large frying pan or wok and quickly fry onion. Add cabbage and toss around for a few minutes to soften slightly. Sprinkle over sugar, the juice and zest of a lemon and the sherry vinegar and toss again. Stir in chestnuts, season and heat through. Serve immediately.
