Prune Compote

Ingredients

about 30 pitted prunes
8 dl (3 1/4 cups) water
1 1/2 dl (2/3 cup) sugar
3 Tbs. potato starch
2 Tbs. cold water
sugar

Instructions

1) Bring prunes, water and sugar to a boil and simmer until prunes are tender, about 15 minutes.

2) Remove from the heat. Stir the potato starch into cold water and add. Simmer until thickened. Chill. Sprinkle with sugar to prevent a skin from forming.,
