Potted Smoked Trout

Ingredients

2 skinless smoked trout fillets
4oz/100g unsalted butter, slightly softened
2 tsp. creamed horseradish
freshly ground white pepper
good squeeze lemon juice

Instructions

1) Flake smoked trout fillets into a bowl and tear into shreds using two forks.

2) Pound butter into this, then beat in creamed horseradish. Season with white pepper and a good squeeze lemon juice. Pack into a pot and chill.

3) Using two dessert spoons serve in "quenelle-shaped" scoops with brown toast and watercress.
