Potato Soup

Ingredients

1 1/2 liters (quarts) water
2 1/4 tsp. salt
500g (1 1/4 pounds) potatoes, peeled & cut into chunks
2 leeks, in chunks
3 dl (1 1/4 cups) full fat milk
1 1/2 Tbs. butter
1 Tbs. sago or tapioca
1/4 tsp pepper

Instructions

1) Combine water, salt, potatoes & leeks and simmer until potatoes are tender 15-20 min. Sieve or puree in a mixer.

2) Return to the pot and add remaining ingredients. Simmer until the sago is transparent, about 45 min. Quick-cooking tapioca requires about 15 min. cooking time. Enjoy!
