Pork With Apples

Ingredients

3 Tbs. oil
3lb/1.4kg loin of pork, boned and rolled
1 onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
12 shallots, peeled
3/4 pt/425ml dry cider
1/4 pt/150ml stock
salt and ground black pepper
1oz/25g butter
2 apples, cored and in chunks
4 oz./150g mushrooms, quartered
2 Tbs. double cream
2 tsp. Dijon mustard

Instructions

1) Heat a Tbs. oil in a large pan and seal and brown pork all over.

2) Remove and place in an ovenproof dish.

3) Add remaining oil and fry onion and garlic over low heat until. Scatter around pork.

4) Brown shallots and add these, too.

5) Pour cider and stock into frying pan and stir to scrape up sediment and juices. Bring to the boil and pour over pork.

6) Season and cover with foil. Cook at 350F, 180C for 2 hours, or until pork is tender.

7) Melt butter in a pan and brown apples.

8) Add these with the mushrooms to the pork 20 minutes before the end of cooking time. Remove foil at the same time to brown meat.

9) Strain juices into a pan and boil until reduced by a third.

10) Stir in cream and mustard, and check seasoning. Pour over pork before serving. Enjoy!
