For the sauce: 2 Tbs. oil 1 medium onion, peeled and finely chopped 2 cloves garlic, peeled and crushed 2 tsp. root ginger, grated 4 Tbs. apple puree 1 Tbs. sugar (or to taste) salt and ground black pepper 2 fillets of pork extra oil for frying
Instructions
1) First make the sauce. Heat the oil in a pan and stir onion, garlic and ginger over gentle heat until softened, but not colored.
2) Add apple puree to the mixture with sugar and cook, stirring until the sugar has completely dissolved. Season to taste with salt and lots of freshly ground black pepper. Put to one side.
3) Trim pork fillet of any fat and cut into thick rounds, allowing three per person.
4) Heat a little extra oil in another pan and cook fillet slices over a high heat to brown each side.
Turn down heat and fry a little longer until the slices are cooked through. Season.
5) Reheat sauce and spoon it on to 4 serving plates. Place cooked fillet slices on top, and serve decorated with flat parsley.
