Pickled Pumpkin
Ingredients
1 kg (2 1/4 pounds) pumpkin
1 kg (2 1/4 pounds) sugar
2 1/2 dl (1 cup) 7% vinegar
25 g (1 oz.) fresh ginger
Instructions
1)
Peel the pumpkin and cut the flesh into 8 mm (1/3") cubes.
2)
Parboil 1-2 minutes. Drain and dry on a cloth.
3)
Bring sugar, vinegar and ginger to a boil. If this syrup seems too thin, reduce slightly.
4)
Pour over the pumpkin.
5)
Pour into clean jars.
