Pickled Herring
Ingredients
6 spiced herring fillets (packed in rosy brine in large tins)
milk or water
3 large onions
3 dl ( 1 1/4 cups) water
3/4 dl (1/3 cup) 7% vinegar
1 1/2 dl (2/3 cup) sugar
1 tsp. ground allspice
1 tsp. black peppercorns
3 bay leaves
1/2 dl (3 1/2 Tbs.) aquavit
Instructions
1)
Soak herring fillets in milk overnight.
2)
Peel & thinly slice the onions.
3)
Bring water,vinegar, sugar & seasonings to a boil. Cool.
4)
Cut the herring fillets into 12mm (1/2") slices & layer w/ the onion in a jar. Pour over brine to cover.
5)
Refrigerate at least 24 hrs. before serving.
6)
Just before serving pour over the aquavit.
7)
Serve w/ rye bread. Enjoy!
