2 Tbs. sunflower oil 1 onion, peeled and finely chopped 2 cloves garlic, crushed 1lb/450g lean mince 3 Tbs. tomato puree 4 Tbs. olive oil 1 Tbs. black olive paste salt and freshly ground black pepper 12oz/350g penne pasta shavings of Parmesan for topping
Instructions
1) Heat sunflower oil in a pan and fry onion and garlic over low heat until softened but not brown. Remove with a slotted spoon and reserve.
2) Add mince to pan, turn up heat and cook until well browned. Return onion mix to pan and stir in tomato puree, olive oil, olive paste, salt and freshly ground black pepper. Meanwhile, cook pasta in lightly salted boiling water until just tender. Drain.
3) Stir mince mixture into pasta and serve immediately in a bowl topped with shavings of Parmesan cheese.
