1 papaya 4 strawberries 8 slices Parma ham For the dressing: 2 tsp. green peppercorns 1 tsp. Dijon mustard 1 Tbs. white wine vinegar 4 Tbs. sunflower oil salt and ground black pepper
Instructions
1) Thinly pare the rind from the papaya and scoop out the seeds with a spoon. Cut into thin slices along the length.
2) Cut strawberries from the point to just underneath the clayx and fan out, so that the fruit stays intact.
3) Make up the salads on four individual plates. Arrange a few slices of papaya with 1 fanned strawberry. Drape Parma ham slices over. Crush green peppercorns lightly and add to a screwtop jar with remaining dressing ingredients. Shake thoroughly. Drizzle over fruit and serve.
