5 Tbs. oil 1 large Spanish onion, peeled and finely chopped 3 cloves garlic, peeled and crushed 3 tsp., fresh ginger root, finely chopped 3 red chillies deseeded and finely chopped 1 tsp. cumin 2 tsp., turmeric 2 tsp. ground coriander 1 large aubergine, chopped into chunks 3 courgettes in chunks 12oz/350g okra, trimmed 3/4pt/425ml vegetable stock 5 tomatoes, chopped salt and ground black pepper
Instructions
1) Heat oil in a pan and fry onion and garlic with ginger and chillies until softened. Add spices and cook one minute more.
2) Add aubergine and stir to mix. Next add courgettes and okra. Pour over stock and bring to the boil. Cover and simmer until vegetables are tender-about 20 minutes. Add tomatoes 5 minutes before the end of cooking time. Season. Serve with rice.
