Oysters Gratinee

Ingredients

12 oysters, freshly opened
1 Tbs. oil
1oz/25g butter
4 shallots, peeled and chopped
2 cloves garlic, crushed
1 Tbs. chopped fresh parsley
salt and ground black pepper
3 Tbs. fresh white breadcrumbs
1oz/25g freshly grated Parmesan cheese
4 Tbs. double cream

Instructions

1) Carefully remove oysters from shell and reserve with their juice. Clean rounded top shells and keep for serving oysters.

2) Heat oil and butter in a pan and gently fry shallot and garlic over low heat until soft. Stir in parsley and reserved oyster liquor. Season with salt and pepper. Add oysters and toss around for a minute only.

3) Transfer oysters and shallot mix back to shells. Pour over a little cream. Top with fresh breadcrumbs and freshly grated Parmesan. Grill until top browns. Serve immediately.
