Oriental Beef And Prawns

Ingredients

3 Tbs. oil
1 onion, halved and sliced
1 tsp. finely chopped root ginger
2 cloves garlic, crushed
1 red and 1 green pepper, deseeded and cut in strips
2 thin slices rump steak, in strips
4oz/100g peeled prawns
2 Tbs. dry sherry
2 Tbs. soy sauce
1 Tbs. dry sherry
2 Tbs. soy sauce
1 Tbs. finely chopped fresh coriander
salt and freshly ground black pepper

Instructions

1) Heat 2 Tbs. oil in a large pan or wok and fry onion, ginger and garlic over gentle heat until softened but not browned. Add pepper strips and stir fry for 2 more minutes until just cooked but still crunchy, tossing around while they cook, Remove with a slotted spoon and keep warm.

2) Add remaining oil to pan and stir fry beef quickly over a high heat to brown and seal the meat. Stir in prawns and reserved vegetables. Pour over sherry, soy and oyster sauce and sprinkle in coriander.

3) Season and bring to the boil. Simmer covered for 1 minute, or until thoroughly hot, and serve immediately.
