Old-Fashioned Lefse
Ingredients
5 dl (2 cups) full fat milk
3-4 tsp. hornsalt (or 3-4 Tbs. baking powder)
3 dl (1 1/4 cups) 35% fat sour cream
2-3 dl (3/4-1 1/4 cups) buttermilk
about 1 kg (2 1/4 pounds, 17 dl, 7 cups) flour
Instructions
1)
Heat the milk. Add hornsalt, sour cream and buttermilk.

Add flour and mix to a stiff dough.

Cover and refrigerate 2 hours. Divide into 25 pieces of equal size. Roll out to thin sheets.
4)
Cook on a griddle on both sides.
5)
Stack the cooked sheets and place under a weight.
6)
To serve, soften in a damp cloth. Spread with butter, sprinkle with sugar, cinnamon and brown goat cheese. Fold into a rectangle.
7)
Note: These lefse were served on special occasions, such as Christmas, Easter and Whitsuntide.
