Oat Bread

Ingredients

2 1/2 liters (quarts) skim milk
4 dl (1 1/4 cups) oatmeal
100 g (3 1/2 oz., 1/3 cup) margarine
70 g (2 1/2 oz.) fresh yeast
1 1/2 kg (3 pounds, about 2 1/2 liters, 10 1/2 cups) whole wheat flour
1 Tbs. salt
2 Tbs. sugar
2 dl (3/4 cup) light corn or sugar syrup

Instructions

1) Bring 5 dl (2 cups) of the milk to a boil. Cool slightly, then pour over the oatmeal. Soak overnight.

2) Heat the remaining milk with the margarine to lukewarm and stir in the yeast.

3) Add half the flour, salt, sugar and the softened oatmeal. Let rise.

4) Knead the dough. Add syrup and remaining flour and knead to a medium-stiff dough. Let rise.

5) Preheat the oven to 200 C (400 F). Form the dough into 5 loaves. Bake 1 hour.
