North Sea Fish Soup
Ingredients
2 1/2 Tbs. butter
4 Tbs. (1/4 cup) flour
8 dl ( 3 1/3 cups) fish stock
salt
pepper
1 small carrot
6 cm ( 2 1/2") leek
butter
12 peeled shrimp
12 mussels
1 1/4 dl (scant 1/2 cup) cooked ocean catfish or monkfish
1 dl (scant 1/2 cup) whipping cream
2 Tbs. sour heavy cream
2 tsp. lumpfish caviar
Instructions
1)
Melt the butter & stir in flour.
2)
Gradually add the stock.
3)
Simmer about 10 min., then season with salt & pepper.
4)
Clean the carrot & leek & cut into fine shreds.
5)
Saute lightly in butter, then add to the soup.
6)
Add shrimp, mussels, fish & cream. Heat until warm.
7)
Divide the soup among four bowls.
8)
Spoon 1 1/2 tsp. sour cream and 1/2 tsp caviar on top of each bowl of soup. Enjoy!
