My “Pf Changs” Chicken Lettuce Wraps

Ingredients

1 Tbs olive oil
1 lb chicken fillets-cubed small
2 cloves minced garlic
1 onion diced
1/4 cup Hoisin sauce/2 Tbs soy/1 Tbs rice vinegar
2tsp. Sriracha to taste (careful-very hot)
1 Tbs. grated fresh ginger
2 scallions-sliced thin
1 8oz. can water chestnuts-drained & diced
kosher salt/blk. pepper, to taste
1 head iceberg lettuce

Instructions

1) Cook chicken cubes in oil until browned (3-5 mins.)

2) Stir in garlic, onion, Hoisin, soy, rice vinegar, ginger & Sriracha-2-3 mins.

3) Add green onions & water chestnuts (2-3 mins.) w/ salt & pepper.

4) Spoon into lettuce leaves & enjoy!
