Mutton-Barley Soup
Ingredients
4 Tbs. (1/4 cup) pearl barley
1 1/4 dl (1/2 cup) yellow peas
1 1/2 liters (quarts) cold water
125g (4 oz.) salted mutton
2 med. carrots
1 large potato
1/4 leek, chopped
salt
pepper
Instructions
1)
Soak barley & peas separately in cold water overnight.
2)
Drain both, combine and cover with the cold water. Simmer barley & peas about 90 min.
3)
Add the meat and simmer 30 min.
4)
Remove the meat, cut into small dice and return to the pot.
5)
Dice the vegetables and add. Simmer until tender, about 15 min. Season with salt & pepper.
6)
The soup should be thick. Serve with flatbread. Enjoy!
