Mushroom Stew

Ingredients

2 Tbs. oil
1 onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
4oz/100g oyster mushrooms, torn
4oz/100g pieds de mouton mushrooms, prepared and torn
4oz/100g small button mushrooms
4oz/100g flat mushrooms, sliced
12 juniper berries
salt and ground black pepper
wineglass red wine

Instructions

1) Heat oil in a pan and cook onion and garlic over gentle heat until softened but not brown.

2) Add mushrooms and juniper berries and cook for a few minutes turning over to coat in the onion mix. Season, then add red wine and simmer until mushrooms are tender.
