Mrs. Walnum’S Black Cake
Ingredients
250 g (8 oz., 1 cup) unsalted butter
400 g (14 oz., 4 3/4 dl, 2 cups)
sugar
2 eggs
500 g (18 oz., 8 1/4 dl, 3 1/2 cups) flour
100 g (3 1/2 oz., 1 3/4 dl, 2/3 cup) chopped citron
100 g (3 1/2 oz., 1 3/4 dl, 3/4 cup) currants
2 tsp. cinnamon
1 tsp. cardamom
1/2 tsp. ground cloves
1 tsp. baking soda
1 tsp. baking powder
Instructions
1)
Preheat the oven to 180 C (350 F).
2)
Grease and flour a 25-35 cm (10x14") rectangular pan.
3)
Beat butter and sugar until light and fluffy.
4)
Beat in the eggs, one at a time.
5)
Add flour and remaining ingredients.
6)
Pour into the prepared pan and bake around 60 minutes. Enjoy!
