Mixed Meat Loaf

Ingredients

1 kg (2 1/4 pounds) lamb organ meats (lungs, diaphragm, heart, esophagus)
100-200 g (3 1/2 - 7 oz.) suet or fresh pork fat
500 g (1 pound) boneless lamb stew meat
2 tsp. salt per kg (1 tsp. per pound) meat mixture
1 tsp. freshly ground black pepper
3/4 tsp. ground allspice
1-2 onions, minced
2-4 dl (3/4-1 1/2 cups) stock or water

Instructions

1) Wash the organ meats and drain well. Blanch 5 minutes in boiling water.

2) Preheat the oven to 150 C (300 F).

3) Clean the organ meats, removing membrane and connective tissue. Cut into small pieces and grind with the suet and stew meat.

4) Season with salt, pepper, allspice and onion. Gradually add stock or water.

5) Spoon the mixture into a greased 1-1 1/2 liter (quart) ovenproof dish.

6) Bake in a water bath (see recipe for meat pudding) until thoroughly cooked, about 45 minutes.
