Marseillaise

Ingredients

3 Tbs. oil
1 onion, peeled and sliced
2 cloves garlic, peeled and crushed
1 Tbs. paprika
1 1/2lb/700g cod fillet, skinned and in chunks
8 shelled scallops with corals
4oz/100g whole prawns
wineglass dry white wine
1/4pt/150ml fish stock
1 Tbs. tomato puree
salt and ground black pepper
1 Tbs. freshly chopped parsley
lime slice
flat parsley for garnish

Instructions

1) Heat oil in a pan and fry onions and garlic over gently heat until soft. Stir in paprika and cook 1 minute more.

2) Add cod, scallops and prawns and stir well to coat in the mix. Cook 2 minutes until stiffened.

3) Pour over wine. Mix fish stock with tomato puree and stir in. Add seasoning and chopped parsley. Bring to the boil, then turn down and simmer for 15 minutes. Serve sprinkled with chopped parsley, lime slice and flat parsley.
