Marinated Herring
Ingredients
4 spiced herring (packed in a rosy brine in large tins)
4 Tbs. (1/4 cup) 7% vinegar
1 dl (1/3 cup) water
2-3 Tbs. sugar
1-2 onions
1-2 bay leaves
Instructions
1)
Soak the herring in cold water overnight.
2)
Bring vinegar, water, sugar & bay leaves to a boil. Cool.
3)
Clean the herring & rinse well. Skin & fillet the fish.
4)
Dry the fillets well. Cut into 2 cm (3/4") lengths.
5)
Peel & slice the onion.
6)
Layer herring & onion in a jar.
7)
Pour over the cold brine.
8)
Chill 24 hrs. before serving.
9)
Serve w/bread or Bergen kringle. Enjoy!
