Mackerel Or Herring Fricassee

Ingredients

2 mackerel or 2-3 herrings
4-5 carrots
2-3 parsnips
1 Tbs. salt
1 1/2 liters (quarts) water
3 Tbs. butter
1 dl (1/3 cup) flour
1 1/2 liters (quarts) fish stock
salt
ground white pepper
3 dl (1 1/4 cups) whipping cream
1 Tbs. chopped parsley

Instructions

1) Clean and rinse the fish. Cut into 2 cm (3/4") slices.

2) Peel, wash & cut the veg. into 1 cm (1/2") dice.

3) Cook in salted water until tender, about 6 min. Keep warm.

4) Poach the fish in the veg. water 6-8 min.

5) Remove the fish from the cooking water & keep warm.

6) Strain the stock.

7) Melt the butter, then add the flour. Gradually whisk in the stock.

8) Simmer 10 min. Season with salt & pepper.

9) Whisk in the cream & simmer 2-3 min.

10) Arrange fish & veg. on a platter.

11) Nap with sauce & sprinkle with parsley.

12) Serve with boiled potatoes. Enjoy!
