Mackerel Cakes

Ingredients

250 g (9 oz.) scraped mackerel fillet
1 tsp. salt
2 Tbs. finely chopped suet
1 tsp. potato starch
1 tsp. minced onion or chives
3/4-1 dl (1/3 cup) mackerel stock
butter

Instructions

1) Grind the mackerel twice with the salt and suet.

2) Transfer to a food processor and add potato starch and onion. Process until stiff.

3) With the motor running, gradually add the stock. The mixture should not be too loose.

4) Form into burgers and fry in browned butter 2-3 minutes per side.

5) Serve with pan juices, mashed rutabagas and boiled potatoes. Enjoy!
