12oz/350g macaroni 1oz/25g butter 1oz/25g flour 1/2pt/300ml milk 4oz/100g cream cheese with herbs 2oz/50g smoked salmon strips 1 Tbs. fresh dill, finely chopped good squeeze lemon juice salt and freshly ground black pepper dill sprig for garnish
Instructions
1) Cook macaroni in lightly salted boiling water until al dente. Drain and reserve. Keep hot.
2) Melt butter in a pan over low heat and stir in flour. Cook for 1 minute. Take off the heat and gradually add a little milk, stirring. Return to heat and still stirring, add the rest of the milk, little by little and carry on cooking until sauce is smooth and thickened.
3) Then add the cheese and stir this in well to melt. Next stir in smoked salmon, fresh dill and lemon juice. Season with salt and freshly ground black pepper to taste. Remove from heat.
4) Toss macaroni and sauce together to coat. Pile on to a serving dish, topped with a dill sprig.
