12oz/350g fresh cranberries 1/4pt/150ml freshly squeezed orange juice grated zest of 1/2 orange 2 Tbs. sugar or to taste 2 Tbs. brandy salt and freshly ground black pepper
Instructions
1) Rinse cranberries and drain. Place in a pan and add orange juice,orange zest and sugar. Pour over brandy. Bring to the boil and simmer until cranberries pop. Continue cooking until berries are soft.
2) Season sauce with salt and freshly ground black pepper. Puree sauce in a processor until almost smooth. Spoon into a pot and cool. Serve with roast turkey and all the trimmings.
