Lightly Salted And Smoked Leg Of Lamb
Ingredients
1 lightly salted leg of lamb
2 Tbs. butter
2 tsp. flour
3 dl ( 1 1/4 cups) whipping cream
300 g (10 oz., 1 1/4 cups) unsalted butter
Instructions
1)
Preheat the oven to 125 C (250 F)

Wrap the leg of lamb in aluminum foil.
3)
Insert a meat thermometer into the thickest muscle.
4)
Roast until the internal temperature is 71-74 C (160-165 F). Count on 3-3 1/2 hours.
5)
Cut across the grain into thin slices.
6)
Melt the butter and stir in the flour. Gradually add the cream. Bring to a boil.
7)
Remove from the heat and beat in the butter in pats. Do not allow the sauce to boil after the butter has been added.
8)
Serve with boiled potatoes and mashed rutabagas. Enjoy!
